     Grilled Cheese and Veggie Sticks

 

Serve your kids a classic grilled cheese sandwich with a side of fresh cut veggies like carrots, celery, and cucumber they’ll love it!!

Ingredients:
For the grilled cheese: – 4 slices of bread – 2 tbsp butter – 1 cup shredded cheddar cheese – Salt and pepper to taste.
For the vegetable sticks: –
2 carrots, cut into sticks –
2 celery stalks, cut into sticks –
1 bell pepper, sliced into thin strips –
Hummus or ranch dressing for dipping Instructions:
Method
Heat a frying pan over medium heat. Spread butter on one side of each slice of bread.
Place two slices of bread, butter-side down, in the frying pan Sprinkle half of the shredded cheddar cheese on each slice of bread.
 Top each bread slice with another slice of bread, butter-side up. Cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
In the meantime, prepare the vegetable sticks by cutting the carrots, celery, and bell pepper into sticks. Arrange them on a plate for serving.  Serve the grilled cheese sandwiches hot with a side of vegetable sticks and your choice of dipping sauce.

Peanut Butter and Jam Quesadilla.

Ingredients
2 flour tortillas
2 tablespoons creamy peanut butter
2 tablespoons jelly or jam of your choice
1 tablespoon butter
Spread peanut butter on one side of one of the tortillas.Spread jelly or jam on one side of the other tortilla. Place the tortillas together with the peanut butter and jelly sides facing each other.
In a frying pan melt the butter over medium heat. Then place the assembled tortillas in the frying pan and cook for about 2-3 minutes on each side, until they are golden brown and crispy.
Remove from the frying pan and let cool for a minute before cutting into wedges. Serve warm and enjoy your peanut butter and jelly quesadilla!

Mini Pizzas

Ingredients:

One package of mini pizza crusts (or English muffins, pita bread, or tortillas) –

1 cup of pizza sauce

1 cup of shredded cheese

Toppings of your choice (pepperoni, sausage, veggies, etc.)

Instructions

Preheat your oven to 375°F (190°C). 2. Place your mini pizza crusts on a baking sheet. Spread a spoonful of pizza sauce onto each crust, leaving a small border around the edges. Sprinkle a generous amount of shredded cheese on top of the sauce.

Add your kids desired toppings on top of the cheese. Then bake the mini pizzas in the oven for about 10-12 minutes, or until the cheese is melted and bubbly. Remove from the oven and let cool for a few minutes before serving. 8. Enjoy your delicious mini pizzas!

 

Baked Potato Bar

Bake potatoes in the oven and let your kids top them with their favourite toppings like cheese, bacon, sour cream, and chives.

Ingredients
4 large russet potatoes
1 cup shredded cheddar cheese
1/2 cup sour cream – 1/4 cup chopped green onions
1/4 cup cooked bacon, crumbled
1/4 cup chopped fresh herbs (such as parsley, chives, or cilantro) 
Salt and pepper, to taste
Instructions:
Preheat your oven to 400°F. 2. Wash and scrub the potatoes thoroughly, then prick them all over with a fork. This will allow steam to escape during baking.
Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
Remove the potatoes from the oven and carefully slice them open lengthwise with a knife.
Use a fork to gently fluff the insides of the potatoes.
Set out a buffet of toppings, such as cheddar cheese, sour cream, green onions, bacon, herbs, salt, and pepper.
Let your  kids customise their baked potatoes with their favourite toppings.  Enjoy your delicious baked potato bar!

 

Taco Salad

Ingredients
You can use el paso taco kit available at your local supermarket, or
1 lb ground beef
packet taco seasoning
head of lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup shredded cheddar cheese
1/2 cup diced red onion –
1/2 cup diced bell pepper
1/2 cup salsa – 1/4 cup sour cream
Instructions:
In a large frying pan, cook the diced onion seasoning and ground beef over medium heat until browned and cooked through. Drain any excess fat. Add 1/2 small cup of water, simmer for 5-10 minutes until the mixture thickens. if you are using the el paso Mexican kit follow the instructions on the packaging.
Warm the taco shells for 2-3 mins in the oven or grill.
In a large salad bowl, add the chopped lettuce, cherry tomatoes, cheddar cheese, bell peppers. (salad mixture)
Fill the slightly toasted taco shell with the cooked ground beef mixture. Add some salad mixture on top of the filled taco shells.
Drizzle salsa and sour cream over the top of the filled taco shells  enjoy your delicious taco salad!

 

Mac and Cheese

Make a classic mac and cheese with your children, whole wheat noodles and your favourite cheese.

Ingredients:
8 oz elbow macaroni –
2 cups shredded cheese (such as cheddar, mozzarella, or a blend) –
2 tbsp butter
2 tbsp all-purpose flour
1/2 cup milk                                                     
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder –
1/4 tsp onion powder
Instructions:
Cook the macaroni according to package instructions. Drain and set aside. In a large saucepan, melt the butter over medium heat. Add the flour and stir constantly for about 1 minute to create a creamy consistency  Slowly pour in the milk while whisking continuously to avoid lumps. Continue to cook and stir until the mixture thickens, about 5 minutes.
Add the shredded cheese, salt, pepper, garlic powder, and onion powder to the saucepan. Stir until the cheese is melted and the sauce is smooth.  Add the cooked macaroni to the cheese sauce and stir until well combined. Serve hot and enjoy!
Optional toppings: breadcrumbs, chopped parsley, chopped spring onions extra shredded cheese.

Fruit Kabobs

Ingredients:
Assorted fruits (such as strawberries, pineapple, melon, grapes, and kiwi)       
Wooden skewers
Yogurt
Instructions:
Wash and cut the fruits into bite-sized pieces. Thread the fruit pieces onto the wooden skewers in a colorful pattern.  Serve the fruit kabobs as a healthy and delicious snack or dessert option.Serve with a side of yogurt . Enjoy!
