KID’S VEGGIE WRAPS

veggie wraps

Ingredients
1 packet of tortilla wraps
4 large collard green leaves
1 cup hummus
1 bell pepper, thinly sliced                                                                   
1 cucumber, thinly sliced
1 carrot, julienned
1 avocado, sliced
1/2 cup alfalfa sprouts
Salt and pepper to taste
Instructions:
1. Start by washing and drying the collard green leaves. Lay them flat on a cutting board and carefully cut off the tough stem in the middle of the leaf.
2. Spread a layer of hummus onto each collard green leaf, leaving about an inch of space around the edges.
3. Layer the bell pepper, cucumber, carrot, avocado, and alfalfa sprouts on top of the hummus, dividing the ingredients evenly among the four wraps.
4. Season with salt and pepper to taste.
5. To wrap the vegetable wraps, fold the sides of the collard green leaf in towards the center. Then, starting from the bottom, roll the leaf up tightly to form a wrap. 6. Slice the wraps in half diagonally and serve.
